Yellow Patty Pan Sunburst Squash Seed

52 days. 20 seeds. Yellow Patty Pan Sunburst is a gorgeous summer squash variety that is bright-yellow colored with a green sunburst at the stem end, and its flavor is as good as its beauty. This disk-shaped squash has a scalloped edge and a creamy white, tender flesh. It is extremely delicious when harvested young at 1-3", with a mild buttery, nutty flavor. This All-America Selection winner is a compact plant that will produce heavy yields in a small space, and it is highly ornamental as well. Try it steamed, baked or raw in a salad. One of my favorite unique ways to prepare it is let it grow to about 4-5", scoop out some of the flesh in the middle, brush it lightly with olive oil and lightly salt it, roast it in the oven until firm but tender (20-30 minutes), take it out and crack an egg into the middle, season it with your favorite herbs and salt and pepper, put it back in the oven and cook until egg is set.
