These green bulbs have a crisp, white flesh with a mild cabbage or turnip-like flavor with nutty overtones, and they are excellent raw or cooked. One of my favorite ways to prepare them is to mash them like potatoes, or with a 50:50 ratio of mashed potatoes and mashed kohlrabi. Also, one cup of cooked kohlrabi contains only 40 calories and has nearly 140% of the recommended daily allowance for vitamin C, which makes it a perfect healthy snack.
