Delicata is an old-fashioned variety of winter squash that was created in 1894 by Peter Henderson Company of New York City, was very popular during the 1920s, and has recently become popular again. These cream-colored squash have beautiful green stripes, grow to around 3 lbs. and have a very delicious, sweet potato-like flavor -- even the tender skin can be eaten. Try baking or steaming them for a real treat.
